Christian and Elisabeth Amiot are soft-spoken but determined winemakers who know what they want from their excellent range of wines. Although their estate is not large (17 acres) they are one of the premier producers in Chambolle. They use a method called "Lutte raisonnée" in which systematic treatment of vines is abandoned in favor of treating vines only when necessary. Of course, the harvest is manual with sorting grapes in the vines as well as back at the winery. Wine-making is traditional in open wooden vats over a 2 week period. The wine is aged in oak casks for 18 months. Light filtering may be called for based on vintage characteristics.

This particular wine is a great example of the Chambolle nose, meaning an enchanting mixture of sweet red berries and fragrant flowers - particularly violets.
