This grand cru comes from the only red grand cru area in the Côte de Beaune - the famous fields of Corton, around the village of Aloxe-Corton (pronounced in Burgundian French Alosse: here they replace X with double S in pronunciation). This particular wine comes from a "white field", meaning there is a high percentage of limestone or "pierres" which is the origin of the name Perrières. Due to the higher percentage of limestone, this Corton will tend to show more elegance than its more robust neighbors in other Corton fields (see map).

The nose of this wine is a great example of Burgundy pinot - an enchanting aroma which has passed the fresh fruit stage but has not yet arrived at the earthy/mushroom smell of an older wine. We find a hint of cherries macerated in alcohol (kirsh). The taste is of soft tannins, a good acidity level, and a great representation of the soft elegance of a Corton Grand Cru.

In all, this wine is in its transition from a young, fruity wine to a more evolved wine. This is one of the aspects that we particularly enjoy, since some other 1992s that we have tasted are further along in their evolution. Although most '92s should be drunk now or soon, this still has some aging potential.

The Domaine Michel Juillot uses manual harvesting, and vats their wines between 12 and 16 days. The wines are aged in oak barrels for 18 months, 30% of which is new oak each year. Filtering is only used if judged necessary before bottling.
Some hints to better enjoy this wine:

- Serve it in a proper glass - a brandy snifter or other glass that narrows at the top
- Open it 30 minutes before serving
- Don't serve it warmer than 60°F

| Laurent likes this wine with creamy cheeses (but then again he likes creamy cheeses whenever he can get them!) Another option is veal chops - a delicate meat with a delicate wine. |
