The terroir of the village of Fixin, located in the northernmost area of the Côte de Nuits, produces deeply colored wines with high tannins. The well balanced acidity/tannin combination makes these wines some of the longest and best aging wines in Burgundy. The aromas of fruit are in the red and blackberry categories with youth, but animal aromas (fur and musk) can be found with time. The power of Fixin blends well with equally solid and strong dishes such as beef stew, strong meats, etc.

The Fixin we have selected this month is made by Domaine Guy Dufouleur and the vines found on the field called Clos du Chapître are approximately 50 years old. The Dufouleur family has been in the wine business in and around Nuits St Georges since the 1600s. The winery named Domaine Guy Dufouleur started in the 1960s and has continued the family's specialization in powerful wines which correspond to the character or terroir of Nuits St Georges. Although geographically speaking Fixin is far from Nuits St Georges (in Burgundian terms that is 9.3 miles!) the character of the wines is similar.

This wine shows us why Fixin is one of the powerhouses of the Côte de Nuits. Strong, tannic and full of flavor, this 1er cru does not disappoint. Prepare your taste buds for this one if you drink it young, but, on the other hand, don't be afraid to hold onto this wine for a few years if you have appropriate cellar conditions.
